Black bean tamale and a fridge clean out salsa with yellow heirloom tomato, arugula, shallots, jalapeños and avocado.

A feast... the only way to describe this gorgeous and tasty spread from @eatmilu. Marinated cucumbers, crispy cauliflower, watercress salad, tofu seaweed salad, broccoli and mushroom wontons, crispy chili crisp chicken, charred broccoli and a pineapple bun to wash it all down. Can’t wait for my fam in Canada to take them there. I love everything this place does and can’t wait for the cookbook 😉

When in doubt make a quick vegan tostada. Corn tortilla, refried black beans, avocado, shaved Brussels sprouts, asparagus romaine, watermelon radishes, cilantro, green onion, sunflower seeds, pumpkin seeds, jalapeño and lime. Basically anything I could find on the kitchen. It’s a micronutrient power lunch. Muy delicioso! 🌮

The perfect cure for snow day blues. Lentils with fresh turmeric, shredded carrots, and dandelion greens topped with ginger, fried shallots, cumin and garlic. At the bottom is a tablespoon mix of red quinoa and rice for that comforting bite. Lately, I’ve been adding lots of shredded veggies to sauces, soups and lentils for upping the nutritional value. What’s your fav comfort food for a snow day?

Karela or bitter gourd. One of my favorite medicinal vegetables. Sautéed with onion, spices and garlic, or stuffed with seasoned lentils... it’s absolutely delicious. Bitter gourd contains a treasure of important nutrients ranging from iron, magnesium and vitamin A to potassium and vitamin C. An excellent source of dietary fiber, it also contains twice the calcium of spinach, beta-carotene of broccoli, and the potassium of a banana. It’s benefits include help controlling blood glucose levels, detoxing liver and reducing bad cholesterol. Or as I said, I just love the taste of it.
